Let this mixture macerate for 10-15 minutes. While the fruit is resting, make the topping. In a separate medium bowl, whisk together the flour, sugar, baking powder, salt, and cloves. Cut in the cold butter (cut into ½-inch / 1.3 cm pieces) using a pastry cutter until the mixture resembles coarse crumbs. Gradually add the buttermilk and heavy cream, mixing until just combined. Arrange the fruit in a 9-inch square baking dish. Drop 2-inch (5 cm) round “biscuits” on top of the fruit, brushing them with the remaining heavy cream and sprinkling with demerara sugar. Preheat your oven to 375°F / 190°C. Bake for 40-50 minutes, or until the topping is golden brown and the fruit juices bubble around the edges.
